Asparagus Lasagna
I had some asparagus sitting in the fridge for some days now and i wanted to cook it but not one who has had it in her diet often in fact if ever but recently i tried some at home with some vegi friends and liked the taste.
I wanted to bake it but not sure on what dish to try i opted to make a lasagna kind. Originally i wanted to wrap them in pancakes and cover with a Bechamel sauce and cheese but i was to lazy to make the pancakes and felt the lasagna sheets ready made would be easy hence my Asparagus Lasagna
here it is in pictures and very nice it was too mashaAllah!
I cut the asparagus lengh ways with a long knife , layered the lasagna in the usual way laying with mozzarella cheese topping with the bechemel sauce and grated chesse of your choice i used Cheddar.

Baked Beans Curry
This is a dish you Brit's can relate to. When presented with a tin of baked beans in Algeria by a good oldie Irish friend and i told her what i shall make with them to savour the tin as they are like gold out there for the Brit's of course. She told me it was like a crime.i reminded her my pallet was not so bland and i will enjoy them more this way.
The history of this dish goes for me anyhow.......one of the few memories i have of my daddy. Both of my parents worked full time when i was growing up. Dad worked nights and mum days some days when mum had not been super organised and left lunch or tea to be heated up by daddy for us. He would some times whip this up and it tasted great, he would roll out the biggest chapatti's you ever saw that only half would fill you up.

It's so quick and easy
sweat some onions cut into slices.......add some chopped fresh chili............add the tin of beans ........add the powdered spices salt, garm masla and cumin. Mix well. Add some chopped coriander and mint.serve with freshly made chapatti's.

cauliflower & carrots in a corriander & cheese sauce
A bit like cauliflower cheese but with an Asian twist, cumin. I fried some onion in a pan with a little oil as this began to cook added a teaspoon of whole cumin seeds, salt, pepper and powdered garlic. I added a small cauliflower and some sliced carrots, leveled it with boiling water and covered it and let it cook latter removing the lid to allow the juices to evaporate.

In the meantime i made a coriander sauce , just a roux with finely chopped coriander(as opposed to a parsley sauce)poured this over the cauliflower and carrots, then grated some cheese and popped it into the grill.

Serve with a green salad.

mange tout et les carrots
I used a little olive oil and sauteed some minced garlic & ginger, salt , pepper and a little sprinkle of canyne pepper. Stir fried this all with the carrots that i had previously steamed and chopped and the mange tout, a delightful side dish.

Warm Salad
New potatoes, boiled eggs, red onions, sprig of mint and some parsley, black olives dress with any dressing of your choice.
Can be eaten cold but i like mine slightly warm.

Quick Chicken Soup with homemade croutons
1 onion, carrots plenty of fresh coriander, generous cut of butter,1 small potato,1 veg stock cube.
Put it all in a pan and add boiling water and then add previously steamed boneless chicken.
Once veg is done blend it with the hand blender.
Toast some bread on a high setting in the toaster.
Remove from toaster and cut in to small squares.

Snails& Snacks
In between two rounds of shopping trips i prepared some snacks to keep the family going. first one is called 'snails' i am sure this is due to the shape, just mix up a plain flour, brown flour equal amounts, yeast, salt, sugar and warm water to mix. Leave to rise. i has some left over minced beef and spinach curry fom the previous evening. i rolled out the dough into a rectangles shape , spread it with the curry , grated some cheese rolled it all up like a Swiss roll and baked it at gas mark 5 for about 20Min's and this is what i had

Salmon fish & Spinach Pie
I made a pie today- i used
salamon fish, spinach, onion, potatoes thinly sliced
Spices, salt, white pepper, mixed herbs
Roux sauce
short crust pastry

I made the pastry by rubbing butterinto the flour until it resembled fine bread crumbs , with cold water i formed a dough. I set this aside ina ball shape in a plastic bag in the fridge while i made the filling.
i put a little cooking oil in a pan and sweat the onions. Add the herbs and spices , i added the thinkly sliced potatoes , and salmon pieces, covered the pan and let this cook a little and when the fish was nearly done i added the shreaded spinach.
Once the filing is cooked , make a white roux sauce, this i made with butter , flour and milk.
Now roll out the pastry to fit the dish and fill, with salmon filling and roux sauce.
now roll out another piece of pastry for the cover
, you can decorate it with some pastry leafs, brush with egg yellow, sadly i didn't have any so mine is cooked without.
