Key Lime Pie
I made this desert for my guest as it was her favourite , I have never had this before let alone cooked it up. I used a recipe from the back of the tin of confessed milk, it was a Jamaican brand so the pie was a little different to what my friend had eaten before , still yummy.
The piping bag went in the bin as it was rubbish!

Lemon Meringue Tarts
I have always wanted to try to make meringues and lemon tart as I know my dh is a great fan of tarts (the edible type that is!). So when I saw this and knowing I had lemons in my fruit bowl I headed for the kitchen.

I have never really been a fan off lemon tart or pie as it is always to citrus and tangy. Now once I had made mine and it was hot out of the oven I had two naughty slices right away. What a delight to my taste buds, tantalizingly tangy but not over bearing. You have got to try it inshaAllah!

I did not have the mini tart cases for baking so I made a big one and my meringue needs some work................it really took ages to whisk but it looks like it needed more but this didn't effect the taste at all.

Chocolate pancakes
My daughter had exams and to get her set off for the day, brain food. She told me her teacher at ''eat lots of chocolate'' at 10pm Sunday evening and i said, ''Why did you not tell me soon i could have got some in?'' In Algeria they tell you to take a spoonful of sugar on the morning of the exam so sweetness and a link to brain activity seems evident. Well i was not about to let my dd go deprived so i thought up the perfect
For the pancake mixture:
110g/4oz plain flour, sifted
pinch of salt
2 eggs
200ml/7fl oz milk mixed with 75ml/3fl oz water
50g/2oz butter
To serve:
icing sugar (powdered)
and the results are this , everyone had breakfast that morning!


Exam BreakfastJust your basic pancake recipe and add some cocoa powder or as in my case some drinking chocolate.

Apple & Carnberry Pie
My DH came home with a big bag of organic cooking apples and the Acidity was minimal making a great tasting pie.
My Apple pie did not turn out like i had hoped but it tasted great!
I overloaded it with too much filling, forgot to brush the pastry, used the wrong dish .............the list is endless but it TASTED divine mashaAllah!
You can use this recipe , i just made it up as i went along but this recipe is similar. We served it warm with custard.
Now have a look at my disaster

Cinnamon-Lemon Sweet Rolls
I came across this recipe from a link i followed from Henia's blog i needed a quick fix last night after a hectic morning and was fasting and wanted something to go with my daily dose of Early Grey .
I found the recipe here This is a wonderful blog with great step by step pictures of Azerbaijan influenced foods!
i tweaked it a little to what i had at home , i didn't use cardamom or and egg but they came lovely all the same.

Healthy Oat & Honey Snack
1/4 cup of sesame seeds
1 cup toasted oats
3 cups rice bubbles (Rice Crisp's , UK)
1/2 cup coconut
1/4 cup sunflower seed kernels
125g butter
1/3 honey
1/3 cup peanut butter
1/2 cup raw sugar
what to do?
Line a lamington pan with grease proof paper. Toast the sesame seeds and oats on an oven tray for about 5 mins. Cool to room Temperature. Combine Oats, Rice bubbles, coconut, sunflower and sesame seeds in a bowl. Combine butter, honey , peanut butter and sugar in a sauce pan, stirring constantly not allowing it to boil. Until the butter is melted and sugar dissolved. Bring to boil, reduce heat, simmer uncovered for a little longer then stir it into the dry ingredients. Press into the prepared pan, refrigerate until set before cutting. i pooped it into the freezer for a bit to speed things up.
These are great snacks for the kids and lunch boxes!

185g butter
2 Tsp grated lemon rind
2/3 cup sugar
1 Cup Self Raising flour
1/2 cup of plain flour
1/3 cup milk
2 Apples
2 Tsp water
2 Tsp strained Apricot Jam
A sprinkle of All Spice (optional)
what to do?
Grease a 20cm springform pan. Cream the butter, rind and sugar in a small bowl with electric mixer until light and fluffy. Beat in eggs one at a time, beat until combined.
Transfer the mixture and add the flours and milk. Spread into the prepared pan.

Peel the Apples and cut them into 1/4 remove the cores. Make lengthways cuts into round sides of 1/4 cutting about three quarters of the way through. arrange the quarters , around the edge of the cake (see picture). Bake for about 1 hour.

In a pan add the jam and water, simmer until smooth, spread mixture over hot cake. Allow to cool. Better eaten warm!

My Granny Smiths Apples were very acidity by adding the All Spice it seems to have rid some of that tangy taste!

Nutty Cakes
I picked up this cake tray while on the hunt for a cup cake tray at the local £1 store although it cost me £3 rather than £1. I made a randon mix of cake mix
I used
i creamed the butter with the sugar and Vanilla essence until creamy. I added a little soured cream, 8oz of flour, i used self raising. I added a handful of mixed chopped nuts.
These lttle tasy treats appeared i was not happy with the overall look considering the tin but the taste compensated for it!

Sweet Berry Fool
A very quick and simple summer desert

I blitzed some strawberries with 1-2 table spoons of sugar (adjust to your taste). Keep about 3-4 strawberries on the side whole for decor latter.
In the mean time i whisked up the whipping cream until the peaks appear.


I then fold in 1-2 table spoons of natural yogurt and the blitzed strawberries.

Spoon into your dishes and decorate with the some sliced strawberries and allow to chill in the fridge.

Enjoy!

Get started with this lot


Make up the jelly as instructed on the pack , add the slices of Swiss roll once the jelly has set!

Now make the custard and pour over

Return to the fridge


Next up whip the cream and sprinkle with decor now return to cool yet again to the fridge.

Enjoy !

The occasion is? My son won Gold and Bronze at his karate tournament yesterday mashaAllah. We are all very happy for him as he only started up with this group upon his return to the UK 9mths ago alhamduilah.
